As a farm we have always produced olives of the Rossa della Valle d’Itria variety, a typical cultivar of Puglia’s trulli, grown only in the countryside of the municipalities of Locorotondo, Alberobello, Cisternino and Martina Franca, where it finds the optimal soil and climate conditions to develop its best organoleptic characteristics
The olives are still hand-picked and milled within 24 hours of harvesting with a cold-pressing system at around 20°C
